Instructions:

Foam the butter in a non-stick pan, add the ham to the pan and beat the eggs over it.

Fry until the egg whites are set but the yolks are still runny.

Add salt and pepper to taste. For appearance, do not salt over the yolks if possible, it will give unsightly white spots.

Arrange on warmed plates. Sprinkle the chive rolls on top and serve with fresh bread and pastries.
