Prepare the spaetzle dough. To do this, mix all the ingredients together and stir well until the dough bubbles slightly.
Bring a pot of water to a boil and add the spaetzle to the water using a spaetzle slicer or a spaetzle strainer. Once the spaetzle float to the top, drain the water and set the spaetzle aside.
Finely dice the ham.
Heat the oil in a frying pan or melt the clarified butter.
Fry the ham in it until it has taken on a slight color and deglaze with soup. Let it boil down briefly and now add the cream. Add the spaetzle and season with salt, pepper and a pinch of nutmeg.
Garnish with the chives before serving.
