For the ham fritters, chop the onion finely, dice the salted meat and finely chop the parsley. Sauté the onion in oil, add leek and salted meat and sauté on low heat for a few minutes.

In the meantime, cook the Fleckerln in salted water until al dente. Mix both, sprinkle with parsley, stir well and season with a little pepper.
