Cut shallots into small pieces. Cut bacon and ham into small cubes. Make Fleckerln in salted water, then cool and drain. Heat olive oil in a frying pan, fry shallots, then bacon and ham. Season with pepper, garlic, salt and bouillon cube.
In a baking bowl, stir eggs and sour cream. Add bacon and noodles, mix well. Pour the mixture into a heatproof dish, fold in the Parmesan cheese, add the parsley and bake in a hot oven at 180°C for about 40 minutes. Add the processed cheese just before the end of cooking.
Rinse the lettuce. Mix olive oil, balsamic vinegar and sweetener to a marinade and dress the lettuce.
Serve the ham fritters with the lettuce.
