For the ham in bread dough, dissolve the yeast in water. Then knead with both types of flour, sugar, salt, beer and egg white to a firm, smooth dough. Beat vigorously with your hands for 3 – 4 minutes.

Cover the dough with a cloth and let it rise in a warm place for at least 60 minutes. Knead dough well again and roll out into a sheet on a floured work surface.

Place partial seeds in the center of the dough and fold the dough over them – brush the edges of the dough with water and press firmly together.

Place seam side down on a baking sheet lined with parchment paper. Brush the dough with water and let it rise again in a warm place for at least 60 minutes.

Preheat the oven to 160 °C and bake the ham in the dough on the lowest rack for about 60 minutes until golden brown. Keep brushing with water – this gives the dough a crispy crust.
