Instructions:

For the heart-kidney ragout, chop hearts, kidneys, onion and gherkins.

Sauté onion in clarified butter, add meat and fry briefly. Then add gherkins. Season with salt, pepper and caraway.

Dust with flour and add soup. Simmer for about 10-15 minutes and season with sugar and vinegar.

Serve the heart kidney ragout with mashed potatoes.
