Gingerbread is a classic at Christmas time. Wonderful taste and so many ways to decorate it! Ideal also for baking with children.

Mix eggs, honey and sugar. Sift flour and baking soda and stir into egg mixture. Add gingerbread spice and knead everything into a smooth dough. Let rest for several hours, preferably overnight.

Cover a baking tray with baking paper. Preheat the oven to 170 °C.

Roll out the dough with a little flour so that it does not stick. Cut out cookies and place them on the prepared tray. Brush with milk and put the gingerbread in the oven for about 10 minutes.

Hearty gingerbread can of course be glazed as desired.
