Remove peel from apples, cut into quarters, remove core. Cut apple quarters into narrow wedges and stew with the sugar without liquid at low temperature until soft. The apples must be “dry”.

Rinse the potatoes, remove the peel and rinse again, cook in salted water, drain, then mash, stir with egg yolk, salt, milk and butter. Season with nutmeg.

Grease a gratin dish with butter. Pour in the apple compote first, then the potato puree. Lightly fry the black pudding slices in oil on both sides and place on top of the mashed potatoes.

Peel the onions and cut them into rings. Roast in the remaining butter until golden. Place onion rings over sausage form.

Bake in a heated oven at 200 °C (gas mark 3) for about 15 minutes. Serve hot.
