For the chicken Yukatan finely grate the achiote and mix with so much orange juice that a thin paste is formed. With this paste, the chicken is now generously rubbed inside and out. That is all, salt is not necessary.
Place the chicken in a roasting tin and roast for about 2 – 2 1/2 hours at 160° in a preheated oven, depending on its weight. Halfway through the roasting time, turn the chicken over and add a little water so that nothing burns. Serve the Hen Yukatan with the desired garnish.
