For the herb chicken breast in the roasting tube, wash the chicken breast and carefully cut a pocket in it. Wash the herbs, shake them dry and, if necessary, select them. Roughly chop them and make a paste with the olive oil, Parmesan cheese and pine nuts in a mortar.

Fill the prepared chicken breasts with it, secure the opening with a toothpick and place in a pre-made roasting tube, with 1 end already tied shut.

Press a clove of garlic a little with a flat knife and add it to the bag along with two slices of organic lemon. Rinse a sprig of lemon balm and add it to the roasting tube as well.

Pour the white wine or chicken soup and close the second end of the roasting tube. Place the roasting tube on a baking tray and cut once downwards at the top with scissors, about 1 cm long. Place the baking tray in the cold cooking space of the oven and cook the herb chicken breast in the roasting tube at 160 degrees C convection for 40 – 50 minutes.
