For the herb roast, chop the sage leaves, mix with the remaining spices and mix thoroughly with the olive oil. Rub the roast vigorously with the seasoning mixture.

Let the roast marinate for 2-3 hours. Then put the meat in a roasting pan, place the sage sprigs on top and add the coarsely chopped garlic cloves.

Also add the lemon strips to the meat. Pour in the wine and roast at 220°C for about 90 minutes. After every quarter of an hour, baste the roast with the juices.

Turn the sage sprigs and sprinkle them over the roast.
