1. gut the trout, trim the fins. Rinse thoroughly under running water. Dry with kitchen towel, salt inside and out and season with pepper. Dust all around thinly with 2 tbsp. flour.

Chop parsley, lemon balm, 1 onion and 4 garlic cloves very finely and mix. In a large skillet, heat 6 tbsp olive oil. Sauté herb mixture, stirring, over low heat.

3. place trout in frying pan and brown on both sides for 2 min each. Pour a quarter of a liter of white wine by the tablespoonful, reduce a little at a time and then add the wine. Cook the trout in this way for 15 to 20 minutes. Arrange on a plate and drizzle with the sauce.

Serve with fresh white bread. Serve with a dry white wine.
