For the herring feast, steam the mixed vegetables, but only long enough so that they are still crunchy. Mix the dressing of yogurt, mustard, mayonnaise and herb salt and mix with the vegetables.

Cut apple into quarters (do not peel!) and chop with pickled gherkins and mix with vegetables. Then refrigerate.

Wash and pluck the iceberg lettuce leaves and place them at the edge of the plates. In the middle of the plates, spread the mixed vegetable salad.

Place 4 fork rolls in the center of each (drain properly beforehand and remove wooden sticks). Peel and slice the eggs and decorate the salad with them.

Wash the wild garlic and lesser celandine leaves and scatter over the salad plates. Grate ground pepper over the eggs and serve the herring feast.
