For the herring rolls, clean and wash the cauliflower. Boil water with salt and milk, add cauliflower and cook in about 20 minutes.

Drain the cauliflower, divide into florets and cool. Cook the vegetables briefly so that they are still crunchy and drain them in a sieve.

Mix oil, vinegar, salt and pepper to make a marinade. Marinate the cauliflower florets and then the other vegetables with it.

Rinse the matie fillets well under cold running water and dry with kitchen paper. Peel the onion, cut into thin slices and spread on the matjes fillets.

Roll up and place the rolls in the center of a round platter. Surround the herring rolls with the marinated vegetables.
