For this leaf salad you need well-watered herring, cold roast veal, a cup of pickled beetroot, potatoes cooked in their skins, sour cucumbers, sour apples, onion, hard eggs. All these ingredients are cut into fine cubes and mixed with the capers. Prepare a beef broth from boiling hot water with Liebig’s meat extract (o.Ae.), mix it with salad oil, the juice of the preserved red berries, vinegar, mustard, red fruit wine, pepper and sugar to make a sauce and stir the cut things well with it. It is best to let the salad stand for 24 hours before dressing it and garnishing it with anchovies, peppercucumbers and hard eggs.
