For the herring salad, boil potato, let cool, peel, cut into 1/2 cm cubes. Clean carrots, quarter lengthwise, cut into 3mm cubes and cook until al dente. Boil the peas.

Cut herring fillets into bite-sized pieces and red beet salad into strips. Quarter the onion and cut into fine noodles. Halve the pickled gherkins lengthwise and cut into slices.

Mix the yogurt with the mustard, oil, vinegar and dill to a marinade and mix with the other ingredients. Finally, peel, quarter and core the apple, dice it and mix it into the salad.

Season again and let the salad stand for at least 12 hours. Arrange the herring salad on lettuce leaves and drape the quartered eggs on top.
