For the elder blossoms in cocoa dough, carefully pick the elder blossoms without shaking out the pollen. Place the flowers on a garden table and cover loosely with a tea towel.

That’s where any critters will crawl away. In the meantime, mix the dough with egg, milk, flour, sugar and cocoa powder. Heat oil in a saucepan.

Dip clean blossoms into the batter and then fry in the hot fat, pressing gently on the elder stem so that the blossoms spread out nicely. Serve with applesauce.
