Instructions:

Basic recipe for egg pasta: For 1 egg, calculate 100-125 g of flour.

Knead all the ingredients either in a food processor with a dough hook or with your hands until the dough is smooth, shiny and elastic.

Let the pasta dough rest in a warm place for 30-60 minutes. Then roll out with a little flour, cut and cook in enough salted water: unfilled pasta 3-5 minutes, filled 6-8 minutes. Do not quench homemade pasta.

Basic recipe for pasta with durum wheat semolina: for 4 servings, knead 200 g of flour, 200 g of durum wheat semolina and 200 ml of water into a smooth dough.
