Instructions:

Chop the onion very finely, stir through with the oil, Calvados and the spices. Marinate the hoof steaks with the lid closed in the refrigerator for an hour and a half.

Remove the meat from the marinade, keeping the remaining marinade. Sear the steaks in the hot broiler or frying pan for 1 minute on each side, put the pan away and let the meat marinate for 5 to 6 minutes. Arrange on hot plates, keep warm.

Briefly steam the remaining marinade in the roast stock, extinguish with soup, allow to bubble up, season to taste and serve with the meat.

Tip: Cook only with high-quality spices – they are the be-all and end-all of a good dish!
