Preheat the broiler. Clean the half peppers, rinse them and cut them in half again. Rinse the quartered melanzani and cut into strips. Clean the mushroom, scrape with kitchen paper and cut into slices. Mix the peppers, melanzani and mushroom with the olive oil.

Grill the peppers on the broiler for 3 minutes. Now add the melanzani and the mushroom and grill for 8 minutes. Turn a few times to the other side.

Season the grilled vegetables in a baking bowl with salt and season with pepper, then mix with the balsamic vinegar vinegar. Slice the bun and grill on both sides. Spread the bottom half of the bun with mascarpone, place the vegetables on top and cover everything together with basil leaves. Place the top half of the bun on top and bring the vegetable sandwich to the table while it is still hot.

Tip: Of course, other vegetables, such as zucchini, beef tomatoes or fennel, can also be served between the two halves of the bun.

Tip: Zucchini is a type of pumpkin and therefore low in calories, rich in vitamins and easy to digest – just the thing for a light meal!
