Crush garlic clove, mix with mustard, salt, vinegar, pepper and oil. Pour the sauce over the fennel strips, mix everything together. Cut ham into fine cubes, remove peel from apple and orange, cut into slices and then into cubes. Spread everything evenly over the lettuce, stirring in just before serving.
