For the Italian omelet, mix the ricotta, whipped cream, Parmesan cheese and Gruyère. Stir in the green beans and the chives and season everything with salt and pepper.

Whisk the eggs vigorously and stir into the cheese mixture. Heat the butter and oil in a frying pan and pour in the egg mixture. Fry the Italian omelet on both sides until golden brown.
