Juicy Zucchini Cake From the Hot Air Fryer

For the juicy zucchini cake, wash the zucchini, cut off the ends and cut in half lengthwise. Remove the spongy inside of the zucchini with a spoon. Finely grate the zucchini and squeeze well.

Separate the eggs. Cream butter in a large bowl with confectioners’ sugar, vanilla sugar and grated lemon zest until very fluffy. Gradually beat in egg yolks. Stir in the squeezed zucchini.

Beat egg whites with salt until firm. Mix flour with walnuts and starch and fold into butter-zucchini mixture alternately with beaten egg whites.

Pour into the baking pan of the Philips Airfryer deep fryer and bake at 160 °C for about 40-45 minutes. Let cool and turn out of the pan.

For the glaze, mix the powdered sugar with lemon juice until thick. If the lemon juice is not enough: stir in lukewarm water drop by drop.

Spread the glaze on the juicy zucchini cake and enjoy!
