Instructions:

Mix the pork with garlic, coriander and eggs, then season with fish sauce.

Cut the toast into small squares and spread with the meat mixture. Fry in hot oil until golden brown.

For the sauce, bring the vinegar and sugar to the boil once then chill. Add the shallots and cucumber. Sprinkle with chilli and bring to the table.

Kitchen tip This dish can also be prepared with crayfish tails or poularde.
