The best way to prepare the knockwurst spread is in a food processor (the finer it chops, the finer and creamier the spread will be). I personally make homemade mayonnaise for this spread because it tastes better to me. If you use store-bought mayonnaise, I would recommend adding 1 teaspoon of mustard. Peel the onion. Drain the vinegar from the pickles and peppers as well as possible. Remove the stalk and seeds from the peppers. Cut the ingredients into coarse pieces, put them in a food processor and chop finely. Then add a tablespoon of the mayonnaise to this ‘vegetable mixture’ and mix again. Then remove the skin from the knackwurst and add to the food processor, also coarsely chopped. Chop everything again until the mixture is very fine. Now add the curd cheese, the remaining mayonnaise, ketchup, pepper and salt and mix everything well. The Knackwurst spread is ready!
