Spread the quiche dough on a 26-28 cm baking tray. Prick the bottom evenly with a fork. Refrigerate.

Prepare the pumpkin and cut the flesh into small cubes. Carefully clean the leeks, cut away the roots and cut into fine rings. Peel and chop the onion. Cut the bacon into strips.

Heat the clarified butter in a frying pan. Fry the bacon until crispy. Add the onion and sauté until translucent. Add the pumpkin and leek and sauté for 4-5 minutes, turning frequently. Season with salt and pepper. Set aside.

Mix eggs, whipped cream and cheese well and season with salt and pepper.

Spread the pumpkin mixture evenly on the pastry base and pour the glaze over it.

Preheat oven to 200 °C and bake on the lowest rack for 35-40 minutes.
