Instructions:

For the lamb skewers, first remove the meat from the bone and cut into cubes. For the marinade, mix vinegar, olive oil, turmeric and salt in a bowl.

Crush peppercorns, allspice and cloves with a mortar and add to the marinade with cinnamon, bay leaf, lemon zest and apricot jam.

Add the lamb to the marinade, mix well and leave to marinate overnight in the refrigerator. Quarter the onions and skewer them alternately with lamb.

Brush meat and onions with a little marinade. Place lamb skewers on grill. Sear well for 5 to 10 minutes on each side.
