For the lamb skewers, cut the lamb fillet into bite-sized cubes.

Finely dice the shallots and garlic, mix with all the other ingredients to make a marinade and leave the meat to marinate for 2 to 4 hours, turning several times.

Put the meat on small wooden skewers and grill from all sides or alternatively fry the lamb skewers in a frying pan.
