Instructions:

For the lamb tajine, first peel and finely chop the onion. Remove the seeds from the dates. Wash and finely chop the parsley.

In a tajine, sauté the onions in the ghee. Add the spices. Roll the meat in the mixture on all sides. Add water until the meat is almost completely covered. Bring to a boil, then turn down the heat and simmer the meat for about 90 minutes.

Stir in the dates and honey and season with salt and pepper. Continue to simmer for about 30 minutes.

Toast the almonds and pistachios in the olive oil. Also add to the meat. Serve the lamb tajine sprinkled with parsley.
