For the lavender sticks, sift the flour into a bowl. Add yeast and salt and mix. Pluck the thyme leaves from the stems and chop finely. Mix all ingredients – except for a tablespoon of oil – with the flour and knead into a smooth dough. Cover and let rise for about 40 minutes. Roll out the dough on a floured work surface into a rectangle about ½ cm thick. Cut into strips about 30 cm long and ½ cm thick and roll with both hands into sticks that are slightly twisted in on themselves. Line 2 baking sheets with baking paper and place the dough sticks on them, spacing them slightly apart. Bake in the preheated oven at 220 °C for about 15 minutes until golden brown.

Remove from the oven, let cool and put into tins. Store the lavender sticks in a dry place.
