Quarter apples, remove core and cut into pieces. Steam apple pieces with apple juice, 2/3 of the sugar and the spices.

Crush the rusks to crumbs. Mix sugar, hazelnuts and spices with the crumbs. Melt the butter and brown the crumb mixture in it. Whip the cream until stiff and sweeten with honey.

Put a layer of stewed apples, rusk crumbs and whipped cream in a bowl. Again layer compote and crumbs. Dust with cocoa.
