For the leek and mince casserole, season the mince with pepper, salt, curry and thyme. Knead and fry well in a pan with a little oil or margarine.

Wash leeks, cut into finger-length pieces and boil in salted water for about 7 minutes. Cut tomatoes and carrots into slices.

Peel potatoes and boil in salted water for 10 minutes. Then press them through a potato ricer. Grease or margarine the baking dish.

Put the minced meat first, then the potato mixture, carrot slices, tomato slices and leek on top.

Sprinkle the casserole with grated cheese and bake in the oven on the middle shelf at 200 degrees for about 40 minutes.

Serve the leek and minced meat casserole with green leaf salad.
