Instructions:

For the leek strudel for the dough, put flour, salt and 3 tablespoons of oil in a bowl. Gradually stir in 125 ml of lukewarm water. Then knead the dough until it separates from the edge of the bowl. Brush with oil and let rest, covered, for 30 minutes.

For the filling, rinse the leeks with cold water and rub dry. Cut into fine rings, using the light green part of the leeks as well. Grate the cheese. Mix the curd, leek rings and cheese in a bowl. Season with nutmeg and season with salt and pepper.

Roll out the dough on a floured work surface in the shape of a rectangle or prepare the ready-made strudel sheets according to package instructions. Spread the leek and curd filling on the bottom third. Roll up into a strudel and place seam side down on a baking sheet lined with parchment paper. Brush the strudel with melted butter and sprinkle with sesame seeds. Bake the vegetable and curd strudel in the preheated oven at 200 °C for approx. 25 minutes.
