Soak the lentils in water overnight. The next day, dice the shallots and bacon and sauté in a little butter. Add the lentils to the pot and let them sweat briefly. Pour in the chicken stock and simmer slowly for about 50 minutes until the lentils are soft, which can take completely different amounts of time depending on the variety and texture. Add a little more liquid if necessary. Blend with a hand blender, strain through a sieve and return to the pot. Lightly whip the whipping cream with a whisk and blend in. Season to taste with salt and pepper and allow to briefly bubble up. Serve the finished soup in plates and garnish with crispy fried bacon slices or croutons.
