Instructions:

Rinse the lentils and soak them in cold, unsalted water for one night. A day later, drain the lentils. Cut the onion into small cubes and fry it lightly in a little bit of fat, put it together with the pancetta and the drained lentils into hot, unsalted water and cook until soft. In the meantime, make a roux with fat and flour. Bind the lentils with it and season with salt and pepper. Finally, season the finished lentils with vinegar. Cut the bacon into 4 slices and put them together with the hot sausages on the lentils. Serve with spareribs as a side dish.
