To prepare the Light Eggnog Apricot Cake without baking, tear the cake base into small pieces and place in a bowl. Pour the eggnog over it and mix. Pour into a springform pan and lightly press the mixture.

Mix the yogurt, vanilla yogurt, curd and sour cream in a food processor until creamy, add the sugar, vanilla sugar and about 50 ml of apricot juice. Pour the mixture into the springform pan and let it cool properly in the refrigerator for 24 hours.

Just before serving, cut the apricots in half and garnish the cake with the apricot halves. If desired, the light eggnog apricot cake without baking can be topped with fresh eggnog before serving.
