For the Lime Cheese Cake with Quick Crumb Bottom, first prepare the grill for indirect medium heat. For the base, crush the butter cookies very finely. Thoroughly grease the tart pan with the softened butter and sprinkle with the cookie crumbs.

For the mixture, whisk the egg yolks with the sugar, lime zest and juice (setting aside some zest for garnish). Add the curd cheese and starch and mix to a semi-solid mixture. Finally, gradually pour in the melted butter.

Pour the mixture into the tart pan and bake the Cheese Cake on the grill with the lid closed at indirect heat (160-180 °C) for 20-25 minutes.

Wash the strawberries, pat them dry, remove the seeds and cut them in half. Remove the Cheese Cake from the grill and let it cool briefly. Top the Lime Cheese Cake with strawberries, garnish with lime zest and mint and dust with powdered sugar.
