Lime Cupcakes without Baking with Avocado and Cashew

Instructions:

Blend the dates with the nuts, salt, cinnamon, vanilla and coconut oil in a blender until smooth.

Then divide into four silicone cupcake cups, form a rim and press down well.

Wash 2 limes hot, rub dry, grate the zest and squeeze.

Slice the avocados lengthwise, remove the seeds and scrape out the flesh. Puree in a blender with the cashews, cashew puree, lime juice and zest, coconut oil and sugar until creamy, season to taste.

Pour the cream into the prepared ramekins and refrigerate for at least 3 hours.

To serve, wash the remaining lime while hot, pat dry and finely grate the zest from one half. Cut four nice slices from the remaining lime half and slice each half in half.

Arrange the lime slices on the cupcakes, sprinkle with the lime zest and serve garnished with mint leaves.
