For the lime-mint limo, thinly cut a piece of peel from the lime (without the white inside) for decoration.
Then cut the lime into eighths lengthwise, place in a large glass, add the sugar and half of the mint and mash with a caipirinha pestle.
Add crushed ice and stir well with a long spoon. Top with sparkling water, stir again and garnish with the lime zest and remaining mint leaves.
Serve with a straw!
