Carefully brush one lime under hot water, pat dry and peel the zest in narrow strips with a zester. Grate the zest from one lime. Squeeze the other limes.

Make the sugar with 3/8 liter of water in a small saucepan in about 5 min until the sugar is completely dissolved. Next, add the grated lime zest and let it bubble once. Pour the syrup through a fine sieve and cool completely.

Rinse and pluck the mint, chop it finely and stir it into the syrup with the lime juice. Pour the mixture into a metal bowl and place in the freezer for 1 hour.

In the meantime, whip the egg whites with a pinch of salt until stiff. Mix the whipped cream into the slightly frozen sorbet and refrigerate for another 2 hours. Repeatedly mix with a small whisk so that no coarse ice crystals form.

In mini portions, the sorbet is also suitable as an intermediate course in an extended menu.

Divide the sorbet evenly into dessert bowls or glasses and garnish with strips of lime zest.
