For the linguine with pancetta and thyme, first wash the lemons thoroughly. Grate the Parmesan cheese. Grate the zest from the lemons and mix them well with the Parmesan and thyme.

Add the pasta to the boiling water and cook until al dente, about 4 minutes (or according to package directions), then drain.

Heat the frying pan and render the pancetta in it. Add the linguine to the frying pan, add the Parma ham and mix everything well together with the Parmesan, thyme and lemon mixture. Drizzle with a little bit of good olive oil if desired. Serve the linguine with the pancetta and thyme.
