In a baking bowl, cream together sugar, light butter or butter and clarified butter. Add the egg yolks and lemon zest. Fold in flour and breadcrumbs. Mix everything well. Dust a baking tray with flour. Form cherry-sized balls from the dough. Place on the baking sheet. Press an indentation (not too deep) into the balls with a wooden spoon handle.
