For the liver and bacon rolls, cut the liver into 4 cm long strips and season with pepper and sage.
Cut the bacon slices in half and wrap each piece of liver in a bacon slice.
Put 4 to 5 rolls on a skewer each. Heat the butter in the pan and sear the liver skewers in it for 5 to 7 minutes on all sides.
Serve the liver and bacon rolls with potatoes or salad of your choice.
