This Greek treat, which can be bought freshly prepared in specialty stores in Greece, tastes exceptionally neat with Greek coffee.

The ingredients for the yeast dough to do have to be room warm. Sieve the flour into a bowl and make a hollow in the center.

Crumble the yeast into it and mix it with half the amount of lukewarm water and a little bit of flour to make a pre-dough. Cover the baking bowl with the steam and let the yeast dough rise for about an hour in a warm place.

Mix the remaining tap water into the dough and add the salt. Beat the dough with a spoon until it becomes smooth. This takes about ten minutes. Let the dough rise for another five to six hours in a warm place with the lid closed, until it has doubled in size.

Heat the frying oil to 175 °C in a saucepan.

Dip a tablespoon in tap water and use it to remove from the dough the mass of one level tablespoon full. Pour this unit into frying fat with a second moistened spoon. Fry the ball of dough in the oil, waving it throughout, until golden brown on all sides. Drain the balls on kitchen towel.

For the honey syrup, boil the tap water with the honey and add a piece of cinnamon. Boil the honey syrup for five minutes and add the juice of one lemon. Bring the honey syrup to the boil again.
