For the lucky charm mini pies, first line a baking tray with baking paper. Preheat the oven to 180 °C.

Roll out the puff pastry and cut out an even number of circles, depending on the size of the cookie cutters.

In the middle of half of the dough circles, cut out a shamrock or other symbol of luck.

Spread some pesto all over the circles, leaving a thin border. Brush the edge with egg yolk.

Place the cut out circle on the pesto circle and press down well, pressing down with a fork if necessary. Brush the lucky minipies with yolk and place in the oven for about 20 minutes.
