For the Lucky Noodles with homemade Sweet Chili Sauce, first finely dice the garlic, shallots and chilies for the sauce.

Bring vinegar, water and sugar to a boil, add the chilies, shallots and garlic. Boil briefly, season with salt. When the sauce is cold, pour into clean bottles.(Alternatively, the garlic, shallots and chilies can be mixed with the water and then boiled with the rest of the ingredients. This way the sauce will not have chunks).

Peel and dice the onion and carrots. Cut broccoli into small florets, cut snow peas in half. Cut green onion into fine rings. Peel ginger and garlic. Grate ginger finely, cut garlic into fine cubes.

Prepare noodles according to package directions and rinse in cold water.

Heat oil in a wok, add onion and stir-fry for 5 minutes. Add noodles, carrots, broccoli and snow peas and stir-fry for another 3 minutes. Then add green onion, bamboo shoots and bean sprouts, stir-fry for another 3 to 4 minutes.

Add ginger, sweet chili sauce and some soy sauce, sprinkle black sesame seeds and serve the Lucky Noodles with homemade sweet chili sauce immediately hot.
