One more week, then Ash Wednesday and Lent begins.

In the Middle Ages, this meant no more than three bites of bread and three sips of beer or water. Although the rules are no longer as strict today, many people practice abstinence in the weeks before Easter. Some abstain from stimulants such as alcohol, coffee and tobacco, others do not eat meat or keep their hands off sweets. Still however seven days are time, in order to go it from new so correctly well. e.g. with the Leibgericht of Eiko Scharfenberger, owner and Chefkoch of the restaurant sun in Overath.

Break the chocolate into pieces and dice the butter. Melt both together in a water bath at a moderate temperature. In the meantime, separate two eggs and mix the yolks with two whole eggs and the sugar (do not beat!!) 2. Brush four soufflé dishes or ovenproof cups with melted butter and sprinkle with sugar right up to the rim. When the butter and chocolate have melted, remove the saucepan from the water bath, add the egg and sugar mixture and stir through. Finally, add the flour and stir through as well. By the way, covered with plastic wrap, the amount can be easily kept in the refrigerator for a few hours before baking, so you can easily prepare the dessert for a guest dinner.

For the orange sauce, caramelize 50 grams of sugar in a saucepan over low heat until golden.
