Important: the day before – 48 hours before would be better – do not make the potatoes too soft in their skins.

Remove the peel from the potatoes and grate them (rösti grater). Mix the flour into the potatoes. Season with salt to taste.

Melt butter in a non-stick frying pan, add potato mixture and roast for about twenty minutes, turning and poking throughout, until small balls form.
