For the Mandarin Pork Skewers, trim the meat (remove fat and tendons) and cut into bite-sized cubes. Place in a bowl and season with salt, pepper, curry powder and lemon pepper and mix well. Let stand for 10 minutes.

In the meantime, peel the mandarins and, depending on the size of the wedges, wrap one or two wedges with bacon. Now alternate meat and bacon-wrapped mandarins on small skewers.

Heat about 2 tablespoons of oil in a frying pan. Insert skewers and fry on all sides for a few minutes until meat is browned on the outside but still tender pink on the inside. Lift out and let rest for a few minutes, wrapped in aluminum foil.

Meanwhile, foam fresh butter in the roasting residue, sprinkle in the chopped nuts and toast briefly. According to taste, either immediately drizzle over the arranged skewers or add coconut milk and let the sauce thicken again.
