Instructions:

Crush half the ginger and currants in a large mortar. Finely slice the remaining ginger. Pour all ingredients except the mango fruit into saucepan and cook, stirring, for 150 mmin over medium heat on stove. Add the mango fruit and simmer for about half an hour until the mixture has a jam-like consistency and the mangoes are soft. Allow to cool and pour into airtight containers.

The chutney can be eaten on the spot.
